ABOUT COFFEE 

 

Coffee comes from the Middle East, specifically the Arabs, who around 1,000 B.C. decided to boil coffee beans. Italians enjoy coffee since the 16th century, the French and the British since the 17th century.

 

In Greece 3 coffees are more popular:

-      Greek coffee is made ​​by boiling water with finely roasted coffee into a brass, copper, aluminum or stainless steel utensil with a long handle called “briki”. It is served in a small cup, similar to espresso. Particularly tasteful is the coffee that is boiled on the coals. Depending on preferences, there are several options: sketos (meaning plain) (with no sugar), me oligi (little sugar- half teaspoon of sugar), metrios (medium sugar- one teaspoon of sugar), vari glikos (a lot of sugar- 1 and a half to 2 teaspoons of sugar). The Greek coffee is never drunk until the last drop because of the dregs at the bottom of the cup. The foam generated on the surface is considered a sign of good luck. Many people flip the cup upside down for a few minutes and believe that the patterns formed can predict the future, but not everyone can read them.

-      Frappe (instant ice-cold coffee) is the most famous Greek coffee drink, especially during summer. It is made with instant coffee, cold water, ice cubes, sugar (optional) and is hit with a shaker until it becomes foamy. If you want add a little milk, stir it and serve it in a tall glass with a straw.

-      Espresso is made by drawing steam through ground coffee under pressure. Its kinds are: Ristretto (made ​​by half the amount of water but the same amount of coffee), lungo (is espresso that is left to steam for 25-30 more seconds and is more bitter), latte (made ​​with 1/3 cup of espresso and 2/3 of steamed milk), macchiato (a shot of espresso with just a dab of steamed or foamed milk on top, crema (is a thick, rich foam on the top of a freshly pulled shot of espresso) cappuccino (made ​​with a shot of espresso and equal of steamed and foamed milk).

 

*   Freddo Cappuccino and Freddo Espresso are Greek inventions. It is cappuccino or espresso served with ice cubes and straw (like frappe).
