Lamb on the spit

Traditional cooked barbecued meats, Greek Salads, local wine and cold beer overlooking the caldera of Santorini

Greek spit roasted Lamb (Arni Sti Souvla) is the traditional Greek way of serving lamb at Easter - Pascha. Usually this is the only time of year in Greece that families will prepare lamb this way, (you can find it all year through at Olympos Santorini taverna), however, this recipe is also ideal for preparing great tasting lamb for a large party at any time of year.

We always use very good Greek meat and bathing that meat in a delicious marinade for the Best Taste of the Greek Flavors.

Chicken or Pork Souvlaki served with a side dish of Greek Salad and a second side dish of Homemade French Fries.

The soft and juicy pork loin is the ideal meat you can imagine for "Kontosouvli". The great aroma and the even greater taste of kovtosouvli is irresistibly inviting. The meat is placed on the small rotisseries and cooked for 4-5 hours over charcoal/wood fire until tender and be smoky.
